Gluten Free Banana Fritters

Banana pancakes that don't contain flour are a firm favourite in the gluten free community but how about banana fritters? They are almost the same but a bit thicker and make a great cake/pancake mashup, they are truly delicious whether you have them for breakfast or as a pudding. These are made dairy free but can be made using regular milk if preferred.

Ingredients

3 overripe bananas
1 egg
95g sugar
1 tsp vanilla essence
1/2tsp cinnamon
1/4tsp nutmeg
250g gluten free plain flour
1tbsp baking powder
2tbsp dairy free milk (or normal if preferred)

  • Cooking Time: 40 Mins
  • This recipe makes 6 fritters

Method

1. Mash the bananas with a potato masher and then add in the egg, sugar, vanilla, cinnamon and nutmeg and mix well.

2. Add in the plain flour and the baking powder and mix, if the mixture is really thick add in the milk, if not you can skip the milk.

3. Heat a large frying pan and pour in some of the mixture into two fairly circular rounds, allow to cook on one side for 3 or 4 mins until golden and then flip over and cook for another 3 or 4 minutes. The fritters will take on an almost cake like texture in the middle.

4. Repeat step 3 with the rest of the mixture, you should get around 6 American style pancake size pancakes
