Gluten Free Buckwheat Pancakes/Galettes

Buckwheat is naturally gluten free despite the name and they make incredible pancakes. Buckwheat has an almost bitter taste and when paired with honey or maple syrup as a topping they are like a match made in heaven but they are also perfect for savoury fillings as they do in France. They are perfect as a delicious gluten free breakfast on Pancake Day...or any other day. They are very similar to Staffordshire Oatcakes in texture so if you can't have gluten free oats, it would be a great next best alternative.

Ingredients

90g buckwheat flour
250ml almond milk
3 eggs
  • Preparation Time: 10 Mins
  • Cooking Time: 15 Mins
  • This recipe makes 6 galettes (no filling)

Method

1. Whisk all the ingredients together thoroughly, then pour the batter into a hot, lightly greased frying pan. Fry for around 1-2 minutes on each side.

2. Add your fillings of choice, I used ham and cheese but you can do alternative fillings to keep it dairy free if you wish, fold in half then quarter. If using cheese let it melt for 30 seconds or so before removing from the pan.

Recipe makes 6 galettes, I would recommend 2 galettes would be 1 serving.
