Gluten Free Fruit and Fibre Breakfast Cereal

I miss a good fruit and fibre, it is possible to buy gluten free but its hard to get, not regularly available on the high street. However, fruit and fibre is so easy to make gluten free yourself using a variety of dried fruit and nuts mixed with gluten free cereal. What's more, you can alter it to your taste, skip the nuts, add different ones, use different fruits, add seeds, jazz it up however you like and add your favourite things too it!

Ingredients

300g gluten free special flakes/fibre flakes
100g hazelnuts
100g sultanas
80g dried apple
60g dried banana
50g coconut flakes
  • Preparation Time: 5 Mins
  • Cooking Time: 0 Mins
  • This recipe makes Approx 17x 40g servings

Method

1. Pour the gluten free flakes into a large bowl and set aside. Any brand of fibre flakes or special flakes will work.

2. Place the hazelnuts in a bag and lightly crush using a rolling pin, you don't want them too fine but nor do you want full hazelnuts. and

3. Break the banana into smaller chunks and roughly chop the apple.

4. Add all the nuts, dried fruit and coconut to the flakes and mix well. I like to use my hands to try and evenly distribute it.

To serve add milk to a portion or serve with yogurt.

NB: generally when you buy packets of the fruit etc you will have enough to do double the recipe, so you could always get two boxes of cereal and make a jumbo box and use all your fruit up!
