Gluten Free Spicy Pork Rice

An almost jambalaya type dish but minus the chicken and prawns, it is naturally gluten free and filled with so many aromatic spices it makes for a spicy, taste filled dish that can be enjoyed hot or cold. We used pork in this dish but you could switch to any other meat to change the dish to your liking.

Ingredients

600g pork (preferably pork loin)
80g chorizo
100g green beans
1 onion
2 pints gluten free chicken stock (made with 2 stock cubes)
1/2 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp chilli powder
280g rice
  • Preparation Time: 10 Mins
  • Cooking Time: 30 mins
  • This recipe makes 4 servings

Method

1. Chop the pork into bitesize chunks and fry in a frying pan for a few minutes on each side.

2. Slice the chorizo and add to the pan with the pork, cut the green beens into chunks and dice the onion then add these too.
3. Make up the stock with boiling water and add the spices and chilli powder to it.

4. Pour half the stock into the frying pan and then add in the rice, turn the heat down low and let the rice absorb the stock, you may only need this amount, however if the rice is still solid once absorbed add some more stock, keep repeating until rice is soft and cooked through and the stock is absorbed.
