Gluten Free Vegan Carrot Mug Cake

I love a good mug cake, they are so quick to make, in less than 5 minutes you have a delicious cake, no need to wait and hour to make a bake in the oven! A carrot cake is so easy to do in a mug and even easily to make vegan too, it actually works out better doing it this way that using egg!

Ingredients

1.5tbsp vegetable oil
2tbsp rice milk (or soya milk if preferred)
1.5tbsp maple syrup (or honey if you don't want to make it vegan)
4tbsp gluten free self raising flour
Pinch bicarbonate of soda
1/2tsp cinnamon
1/2tsp ground ginger
2 tbsp grated carrot
1tbsp dried mixed fruit

Method

1. Put everything in a mug and mix well. I prefer putting the wet ingredients in first as the flour tends to get stuck in the bottom of the mug if you don't get your spoon right in the edge, if you put wet in first the flour is less likely to get stuck but make sure you mix well otherwise you can get lumps of flour.

2. Place the mug in a microwave for 1 and half to 2 minutes, in a 750w microwave 1 and half cooks the cake lovely, but a 600w will need an extra 30 seconds. Remove from microwave and serve!
