Gluten Free Slow Cooker Campfire Stew

Campfire stew is one of my favourite slow cooker meals, it is naturally gluten free and a relatively cheap meal as well. You can change the vegetables in it to your liking too, potatoes, mushrooms, onion, squash, peppers, peas, green beans...anything really works well in this stew. It is a proper winter warmer and great for that cold weather, plus with being done in the slow cooker it will be done ready for when you come in from work!

Ingredients

750g gammon joint (I prefer smoked but either smoked or unsmoked is fine
2 peppers
1 onion
1 butternut squash
2tsp crushed garlic
2x can mixed beans
2x 400g cans chopped tomatoes
500ml chicken stock
1/2tsp tabasco sauce
2tbsp paprika
1tsp oregano
1tsp thyme
1/2tsp cayenne pepper

Method

1. Place the gammon joint in the middle of the slow cooker.

2. Dice the peppers, peel and dice the onion and butternut squash (discarding the seeds) and throw into the slow cooker along with the crushed garlic.

3. Drain the mixed beans and add to the slow cooker along with the canned chopped tomatoes and chicken stock.

4. Sprinkle in the paprika, oregano, thyme and cayenne pepper. Mix well (as well as you can around the gammon) and cook on high for 7 hours.

5. Once cooked, remove the gammon from the slow cooker and shred apart using 2 forks. Add it back in and stir well to distribute. Serve!
